Yesterday, one of my best friends and incredible animal activist, Julie Cappiello, texted me that she had made the most AMAZING vegan stuffing and that she only used four ingredients. Say what? I was like GURRRL, you better send that recipe over immediately!
So, I went out to grab the four ingredients: Pre-made stuffing mix, maple syrup, vegan sausage, and vegetable broth. And this morning, I made Julie’s recipe and damn if she wasn’t right. This shit is so easy and insanely delicious! It would make the perfect addition to any Thanksgiving table, vegan or not.
I’m going to share the recipe here. Trust me, you have to try this!
INGREDIENTS

1 box/bag of pre-made stuffing mix (FYI – Julie prefers cornbread stuffing)
1 package of vegan sausage (Julie recommends Field Roast’s Breakfast sausage. I went to THREE different supermarkets and couldn’t find it so I used Field Roast’s Smoked Apple Sage flavor — it was SOOO good!)
1 1/2 cup vegetable broth
4 TBL maple syrup
OK, heat your oven to 425.
Now, open your stuffing mix and dump it into a large mixing bowl. Next, cut or crumble your vegan sausage and brown it in a pan with vegan butter or olive oil.
While that’s cooking, bring 1 1/2 cups of vegetable broth, 1/2 cup water, and 2 TBL of maple syrup to a boil in a small pot.
When the sausage is sufficiently browned, add it to the mixing bowl with your stuffing mix. Mix together. Then, pour the vegetable broth concoction over top of it and mix thoroughly. Add 2 more TBL of maple syrup while you’re mixing (you can add more to taste if you’d like – I didn’t).
Transfer the mixture to a baking pan and cook covered for 20 minutes. Then cook uncovered for 15 more minutes. Fluff that shit out and serve!
